The Original Goldberg's Famous Bagels uses the boil and bake technique. It has been used by our family since 1949 and has never been changed.
First our dough is made using our secret recipe. The bagels are formed and placed on cornmeal dusted boards. After the dough proofs it is then put into a vat of boiling water to activate the yeast.
The bagels are then placed bottom side up onto burlap covered boards and slid into the rotating oven. Once the tops (which are the bottoms) are dry, the boards are flipped to complete the baking process. They continue to rotate until the perfect color is reached. The whole boiling/baking process takes about 20 minutes.
